Joe: I remember my dad with a lot of help, doing the same thing with hogs in front of our house. They would also squeeze sugar cane with a big bill that a mule would pull around too.

Irene: It was my job to help Mama clean the fat off the intestines to be rendered into lard, which was the only type of shortening we had.  This was stored in large containers and had to last until the next hog killing.  Neighbors would help with the job for fresh meat as payment.
